Champagne carries the distinction of being one of the most complex and time consuming beverages in the world to produce. Each step is measured and metered, and every process has been written about and debated for generations, resulting in the single highest minimum production standards of any beverage in the world. In this class, we will dive in to the major regions and the complex production methods it takes to get from the vineyard to glass. You will learn terms like Blanc de Blancs, saignee and dosage. We will taste every style this area produces to learn why no other product in the world which can seduce, beguile, promote, intoxicate and cajole you like a glass of well-made Champagne.

This class will be held at Perch Coffee House on 440 Grand Avenue. Metered street parking is available (meters shut off at 6PM) and there is some residential parking in the area. Please leave a little time to find a spot. Doors open at 6:00PM, so feel free to come in and ask for Paul.

Imported Cheese & Salumi, Jams, Breads, Olives, Grissini and other Antipasto items prepared by Chef Alessandro Campitelli and Chef/Baker Kathryn Phelan.

This class will cover the styles of Blanc des Blancs, Blanc des Noirs, 100% Pinot Meunier, House Cuvee, an Historic House, single-vineyard, vintage and special club or other tete-de-cuvee.
